Greek Chicken with Olive-Butter
1 whole chicken
1 lemon, chopped
1 onion, chopped
olive oil
4 T. butter, softened
4 tsp. Opa! Opa!
10 Greek olives, pits removed and meat chopped

Preheat the oven to 425.  Rinse chicken, inside and out, with cold water and pat dry with paper towels.  Mix lemon, onion, and 2 tsp. Opa! Essence in bowl and drizzle with olive oil.  Fill chicken cavity with lemon mixture and truss.  Mix butter, 2 tsp. Opa! Opa!, and olives in a small bowl.  Pull the skin of the chicken away from the breast to make a pocket and pack the butter mixture under the skin..  Drizzle chicken skin with olive oil and sprinkle with 2 tsp. Opa! Essence.  Rub.  Bake chicken for approximately 10 minutes per pound or until juices run clear and the internal temperature in the thickest part of the breast reaches 160 degrees.
