Opa! Salmon
Salmon filets
Olive oil
Opa!  Opa!


Place sauté or frying pan over medium-high heat.  Rub each salmon filet with olive oil.  Sprinkle filets generously with Opa!  Opa!  When pan is hot, add olive oil and watch for the oil to shimmer along the bottom of the pan.  Place salmon in pan skin side down and cook for 2--3 minutes.  Flip salmon and cook for an additional 2--3 minutes.  Salmon is best when served medium-rare so do not overcook.
