Opa! Halloumi Sandwich with Roasted Peppers and Mint Yogurt Sauce
2 slices Halloumi cheese
olive oil
2 tsp. Opa! Opa!
1 roasted red pepper
1 piece of flat bread
½ cup Greek or plain yogurt
1 clove garlic, minced
juice of ½ lemon
2 tsp. fresh mint leaves, chopped
salt
a few slices of fresh cucumber

Place halloumi slices in dish with a heavy drizzle of olive oil and Opa! Opa!; set aside.  Mix yogurt, garlic, lemon juice, and mint in bowl; salt to taste and set aside.  Heat heavy-bottomed skillet over low-medium heat.  When hot, add Halloumi and olive oil marinade.  Fry until halloumi is soft and golden; flip and fry second side.  Remove halloumi and warm the roasted pepper in skillet.  Lastly, dump out excess oil and fry flatbread for a few moments to soften.  Fold flatbread around halloumi, red pepper, and cucumber.  Serve with mint-yogurt sauce.
