Provence Roasted Red Potatoes
2 lbs. small red potatoes (skin on), chunked
1 1/2 tbsp. Fusion Provence
3 tbsp. olive oil
2 tsp. salt
1/2 tsp. pepper

Put all ingredients in ziploc bag and shake.  Spread over cookie sheet and bake at 375 degrees for about 1 hour.

Note: For a quicker version, pan-fry canned potatoes with this spice combination.
