Bayou Ya-Ya – Cajun Blend Bayou Ya-Ya – Cajun Blend

Ingredients:

  • 1 ½ cups crawfish, shrimp, crab, or lobster meat
  • ½ cup flour
  • 1 ½ cups cornmeal
  • 1 tbsp. baking powder
  • 1 tbsp. + Bayou Ya-Ya
  • 1 bell pepper
  • ½ jalapeno pepper
  • 2 tbsp. sour cream
  • 1 ¼ cup sharp cheddar, shredded
  • 1 cup buttermilk
  • 1 tbsp. butter melted
  • 2 eggs, beaten
  • 1 can cream corn (8 ¾ oz.)

Directions:

Coat 9-inch cast iron skillet with oil and place in preheating 375 degree oven. Sauté meat in sprinkling of Bayou Ya-Ya if uncooked. Mix flour, cornmeal, baking powder, and Bayou Ya-Ya in large bowl. Grind bell pepper and jalapeno in food processor with sour cream. Fold sour cream mixture with remaining ingredients and add to flour mixture. Stir well. Pour batter into preheated skillet. Bake at 375 degrees for 35 minutes or until toothpick inserted in center comes out clean.
