- 8 lamb chops, about 1 inch thick
- 2 tbsp. Opa! Opa!
- 2 tsp. fresh mint leaves
- ½ tsp. salt
- 1–2 tbsp. olive oil
With a fork or mortar and pestle, make a paste of Opa! Opa!, mint leaves, salt, and olive oil. Taste and adjust seasonings as needed. Generously coat lamb chops with the spice mixture and bring to room temperature. Bring outdoor or stovetop grill to a medium–high heat and cook lamb chops for about 2–4 minutes per side. If chops are searing too darkly yet have not reached the desired internal temperature, lower heat slightly and place a foil tent directly over the chops to intensify the heat.
medium-rare/pink: 130–135 degrees internal temperature
medium/barely pink: 140 degrees internal temperature
