Ingredients:

  • 2–2 ½ lb. pork tenderloin
  • 3 tbsp. The Jerk
  • 3–5 cloves garlic
  • 2 tbsp. olive oil

Directions:

In a bowl (with a fork) or with mortar and pestle, mix The Jerk, garlic, and olive oil to make a paste. Spread paste over tenderloin and allow to rest for at least one hour. Over medium-high heat, pan sear tenderloin in cast iron skillet; turn to sear all sides. Next, place skillet into 350 degree oven and bake for 20 minutes or until it reaches an internal temperature of 160 degrees. If grilling, cook over coals for approximately 20 minutes (no need to pan sear). Serve with mango slices; homemade, chunky applesauce; or a fruit salsa.
