1 whole chicken, washed and dried
1 small onion, chopped
1 lemon, chopped
1 tbsp. fresh tarragon (1 tsp. dried)
salt
pepper
1/4 cup butter
2 tbsp. of The Remedy
olive oil
If baking, preheat oven to 450 degrees; if grilling, light and ready grill. In a small bowl, mix onion, lemon, tarragon, salt, and pepper ; stuff mixture into chicken cavity and truss chicken. Create a pocket between chicken and skin and insert butter. Sprinkle chicken generously with The Remedy and rub with olive oil. Bring to room temperature. Chicken can be either baked or barbequed. For baking, bring oven to 450 degrees and bake for twenty minutes; lower oven temperature to 330 degrees and cook chicken until the thickest part of the breast reaches an internal temperature of 160 degrees. If barbequing, cook over indirect heat for one hour.
