• 1 small yellow onion, chopped
  • 1 green pepper, chopped
  • olive oil
  • 4 tbsp. Chive Jive
  • 2 cups cooked rice
  • 15 oz.canned black beans, ½ mashed
  • 1 large ripe tomato, chopped
  • salt and pepper
  • 4 oz. cheddar cheese
  • 4 oz. hot pepper cheese
  • sour cream
  • guacamole
  • green onions
  • black olives
  • lettuce
  • fresh cilantro
  • tortilla chips


Over medium heat, sauté onion and green pepper in olive oil until soft. Mix cooked rice with onion, pepper, ½ chopped tomatoes, beans, and 3 tbsp. Chive Jive; salt and pepper to taste. Spread in serving dish and bake on 350 degrees. When 10 minutes have lapsed, cover with half of the cheeses; bake an additional 10 minutes. While the dip is baking, mix 1 tbsp. Chive Jive into sour cream and prepare other toppings as needed. After the dip has cooled slightly, layer with guacamole, Jive sour cream, veggies, and remaining cheeses. Serve with tortilla chips.
