• blue potatoes or medium-high starch potato like yukon golds, sliced thin

Over medium heat, add a layer of oil to a heavy-bottomed skillet. Heat until oil shimmers slightly. Add potatoes in single layer and fry. When it is time to flip slices, add a generous sprinkling of Kitchen Karma. Continue frying till golden on both sides. Drain on paper towels. Serve immediately.
