Generously season your tenderloin with Scenic City Sizzle and salt–remember, half the seasoning falls off in the cooking process–and bring meat to room temperature, about 1 hour. You may cook your tenderloin indoors or on your grill. If cooking indoors, pre-heat oven to 350 degrees and heat an oven-safe skillet over medium. When skillet is hot, add enough oil to cover the bottom and introduce tenderloin; as each side develops a golden color, turn to sear all sides. Next, place skillet into a 350 degree oven and bake for 20 minutes or until tenderloin reaches the correct internal temperature (pork, 170 degrees; venison 145 degrees). If grilling, cook over indirect heat for 20 minutes or until the meat has reached the desired temperature.
