• 2 lbs. ground beef
  • 2 medium onions, chopped
  • 2 green peppers, chopped
  • 3 cloves garlic, minced
  • 16 oz. can of kidney beans
  • 16 oz. can of diced tomatoes
  • 16 oz. can of crushed tomatoes
  • 2 tbsp Cloud Chili Blend
  • olive oil
  • salt
  • juice of 1 lime, optional
  • assorted hot peppers, minced, optional
  • beer, optional
  • shredded cheese, optional
  • sour cream, optional
  • hot sauce, optional
  • tortilla chips, optional
  • green onions, optional


Brown ground beef in skillet; drain fat. In a large pot, cooked onions in 1 tbsp. olive oil until translucent. Add green peppers and sauté for 3–5 minutes. Feel free to add other peppers as well–consider poblanos, habaneros, or banana peppers. Add garlic; cook for 1–2 minutes. Add ground beef, kidney beans, both tomatoes, and Cloud 9 Chili Blend. Add 6 cups of water or beer and allow to simmer for a couple of hours or until flavors meld. Add the cayenne to taste; salt to taste. Add lime juice if using. Serve with shredded cheese, sour cream, hot sauce, tortilla chips, green onions and other fixings. Enjoy!

Note: The cayenne packet should be added to taste. This is very hot cayenne; use sparingly. Cut recipe in half for a medium-sized pot of chili.
