• 4 tilapia filets, 1–1 ½ lb.
  • 2 T butter
  • 2 T flour
  • 1/8 tsp.+ salt
  • 1/8 tsp.+ pepper
  • ¼ tsp.+ The Remedy
  • ¼ tsp. dry mustard
  • 1 cup milk
  • ½ cup cheddar cheese


Preheat oven to 375 degrees. Lightly season fish with The Remedy and pepper. Place fish in a shallow baking dish and set aside. In a saucepan over medium heat, mix butter and flour into a thick, dark roux until smooth and bubbly. Add 1/8 tsp. salt, 1/8 tsp. pepper, and dry mustard. Mix well. Add milk slowly, a bit at a time, whisking thoroughly after each induction. Bring the mixture to a boil, stirring constantly. Boil for one minute. Remove from heat and add cheese. When cheese is melted, taste and adjust seasonings. Pour rarebit sauce over tilapia and sprinkle with The Remedy. Bake for 30 minutes or until fish is flaky.
