Smoked Sausage & Black Bean Skillet Supper
Smoked Sausage & Black Bean Skillet Supper
2 T olive oil
1 lb smoked sausage, cut into ½ sliced
3 medium carrots, diced small
2 yellow onion, diced small
2 tsp minced garlic
1-2 tablespoons Alchemy Southwest Blend
2 (15 oz) cans black beans, drained and rinsed
2 cups vegetable or chicken broth
Salt to taste

In a large skillet, heat oil over medium-high heat. Sear sausage on both sides -2-3 minutes per side. Transfer sausage to plate. Add carrots and onions to skillet, cook until softened - about 4 minutes - add garlic & Alchemy Southwest Blend and saute another minute. Add beans and broth - bring to a boil. Reduce to simmer and add sausage back to skillet. Simmer for another 10 minutes until carrots are tender.

Serve topped with shredded cheddar or pepper jack cheese, diced tomatoes, sliced green onions, and a dollop of sour cream. You may also serve warmed flour or corn tortillas.
