Holy Mole Taco Salad
2 Tbsp cooking oil
½ medium yellow onion, diced
1 lb protein (pulled chicken, ground beef, cubed tofu)
1 Tbsp Alchemy Mexican Mole Blend
4-8 cups salad greens
1 can black beans, drained
2 cups fresh (or frozen) corn
4-5 radishes, sliced
1 jalapeno,seeded & minced
1 avocado, diced
1 cup salsa
½ cup Alchemy Ranch Dressing*
1 cup coarsely (not fine!) crushed tortilla chips
1 lime, cut into 4 wedges

Makes 4 entree salads. These are perfect for prepping for lunches as shake salads in quart ball jars. Layer avocado, salsa, dressing, seasoned meat, beans, corn, radish, jalapeno. Pack greens onto top. Place lime wedge on top of greens. Close jar. To serve: Squeeze lime into jar. Add crushed tortilla chips. Shake well to mix. Eat.
