Red Beans and Rice (Instant Pot)

Simple and delish.  Start soaking your beans the night before you actually cook the dish.  This Cajun classic that traditionally takes all day to cook comes together in one hour in the Instant Pot.  Featuring Alchemy's Cajun Blend, these Red Beans and Rice are a crowd pleaser.  They also freeze well.

Red Beans and Rice (Instant Pot)
1 lb dry red beans, rinsed and soaked overnight
1 Tbsp olive oil
1 lb smoked sausage, thinly sliced
4 tsp minced garlic
1 medium yellow onion, diced
1 green bell pepper, diced
2 stalks celery, thinly sliced
1 Tbsp Alchemy Cajun Blend
2 bay leaves
4 cup low sodium vegetable broth
Salt, Pepper, and Hot Sauce, to taste
Rice: 6 servings of white rice. This is prepared separately from beans.

Drain beans. Set aside.
Set Instant Pot to the high saute setting. Add olive oil and sausage. Brown sausage on both sides, stirring frequently, about 3-4 minutes. Transfer to a paper towel-lined plate; set aside. Add garlic, onion, bell pepper celery, and Alchemy Cajun Blend. Saute until tender, about 3-4 minutes.
Add 1 cup vegetable broth and scrape all browned bits from bottom of pan. Add sausage, red beans, bay leaves and remaining vegetable broth.
Select manual setting; adjust pressure to high, and set time for 30 minutes. When finished cooking, release pressure naturally according to manufacturer’s directions, about 20-30 minutes.*
Meanwhile, prepare your rice.
Once Instant Pot pressure has released, open and taste. Adjust seasonings, adding salt & pepper to taste. Serve over rice, adding hot sauce, if desired.
